I have deep New England roots and this recipe is one my grandparents enjoyed. I hope you like these cookies as much as I do. There is nothing better than a hot and soft ginger cookie on a cold Connecticut day!
Ginger Cookies
Heat oven to 350 degrees
Beat together into a batter...
3/4 cup shortening
1 cup sugar
1/4 cup dark molasses
1 egg
Mix in...
2 tsp. baking soda
2 cups flour
1 tsp. each: ginger, cloves, cinnamon
Scoop dough into 1-1/2 inch balls, roll and place on cookie sheet.
Flatten each cookie with a sugared glass.
Bake until just cooked, light brown, 8-10 minutes.
2 dozen.
Here is another of my favorites. It’s called a Texas sheet cake. I make it in a 12 x 17″ jelly-roll pan.
In a large sauce pan:
Combine 2 sticks butter + 4tbls cocoa + 1 cup water and bring to rapid BOIL
Add in and mix well with a hand beater:
2 cups flour + 2 cups sugar +1/2 cup buttermilk + 2 slightly beaten eggs + 1 tsp soda + 1tsp vanilla
Pour into the greased and floured pan. Bake 20 minutes @ 400 degrees.
Frosting:
In a large sauce pan:
Combine 1 stick butter + 4 tbls cocoa + 1/3 cup milk and boil
Add in and mix with hand beater:
4 cups confectioners sugar + 1 tsp vanilla
I find it works best to frost the cake hot out of the oven
